This was my second time here. This place has one of the most unique, delicious shrimp broth. It's something that you never tasted before and sososo good. I got the A1(trio shrimp) and you can choose between wide and thin noodles. I would give it a 10/10, as the portions are super filling and delicious. Service was fast, but make sure to come early since there's no reservations and lines get long. Would come back again!

What absolutely amazing food this place has. I'd been here about 2 years ago and remember having the same reaction, but it's about time I wrote a review for it. The service is wonderful, we came on a Wednesday evening towards 8p, so the dining area was pretty empty save for about 3 or 4 parties, and we were seated right away. The seating area is nice and quiet, which we both really appreciated. Derek was our host and server and he was very quick and tended to us! I ordered the Ebiko Prawn Paste Tossed Truffle Ramen and wow!! What an absolutely amazing dish!! It's extremely flavorful, umami, and the right amount of truffle. Not too overwhelming! My partner ordered the Signature Trio Shrimp Noodles and the broth is out of this world-- it's deep, rich, and flavorful. The extra shrimp that comes with the noodles as well add to make it a shrimp lover's paradise. Don't miss out on this place, it's worth the hype!

Came for dinner and the place had a good amount of customers. There were only two staff working and in charge of everything. Though, they made sure everything was satisfied throughout my time there. They were quick with bringing out water, taking orders, and getting the orders to us. Although everything looked promising in the menu, I ordered the Ebiko Prawn Paste Tossed Noodle. Note: do not believe the picture of real shrimp, it comes with shrimp balls. The shrimp balls were good, reminds me of those seafood balls you can get for hotpot at your local asian grocery store. There is a thick and thin noodle choice, I picked thick. The noodles themselves were a good, chewy texture. The sauce itself was not really anything special. It was good, but not something I'd come here again to taste. My friend got the Prawn and Chicken Wonton Tossed Noodle. The sauce was the same for her. Also, we both ordered the spicy option. The spicy was not in the bowl. Maybe they missed that part of our order. The quality of food is great but I would like to try other flavors they offer! The vibe itself gives cute ramen restaurant, great to enjoy with friends/family. The place itself is next to other food/dessert/boba shops. Very convenient and a great place to stop by if you are in South Coast :)

This is such a unique spot that serves delicious shrimp broth ramen. It's a small shop so there may be a wait but it's worth it! The shrimp flavor is very bold and they portions are large. The shrimp they have in the bowl were also very big and they have an option to have the shrimp peeled for you! I also liked the wonton and shrimp balls in my bowl too. Noodles were cooked to perfection and had the right amount of chewiness

Recent stopped by for a quick lunch. I had the ebiko shrimp paste with dry egg noodles. Shrimp balls were good but it only came with 5 pieces. They give you plenty of noodles though. Everything was tasty and not too salty. Service was good. Will definitely eat again when I'm at the mall. More dining option for me.

TDLR: Ramen reimagined but in a good way. Non-pork enters now have a solid shrimp alternative that offers the ramen experience. Shrimp trio Ramen: The broth provides a very rich shrimp taste. The shrimp itself was cooked well and the shrimp ball was better than what hotpot places provided. The noodle was fine and I think it's an honest bowl of ramen. Braised chicken: It's good but nothing to call home about. Tender, sweet, and salty on certain parts. It's a good pairing for the shrimp explosion of a ramen. Service: You order and pay via website after scanning a QR code on the table, so you really have limited interactions with the staff. They're quite active in filling up the water cup which is good. Ambiance: The place is in a small spot in a mall, so the background mall noises will be there. The restaurant itself was okay. Decently spacious and has okay space even at a full house.

Stopped by here after we got hungry from stopping by the gentle monster pop up. Got the prawn and chicken wonton noodle. Was super yummy. Very flavorful with a strong shrimpy flavor throughout the broth. The wontons were soft and shrimpy too. The noodles were chewy and not too soft which I liked. Service was very slow for being almost empty. Other than that though, was a pretty good experience. Food: 4.6/5 Service: 2/5 (SO slow) Ambience: 4/5 (pretty good for in a mall)

Welcome to Collage, a one-of-a-kind elevated dining collective at South Coast Plaza, conveniently located next to Bloomingdale's. This unique venue offers a place to play, pair, and piece together the most perfect dining experience. I recently visited and tried Le Shrimp Ramen Noodle, and it was absolutely delicious! They offer the option to choose shrimp with or without the head, which is a nice touch. The thin noodles were perfectly cooked, and the soup base was incredibly flavorful. It's a must-try for anyone looking for a satisfying meal in a sophisticated setting. So good! Service was very good too! If you're in the area, I highly recommend stopping by for a truly exceptional dining experience. Park in front of Bloomingdales. Free parking!

Came by for Happy Hour, which it's 30% off all main dishes Mon - Fri 2:30 - 5pm. There wasn't a line so I opted for the bar seat because you can watch the chefs in the back make the bowl. I ordered the Signature Trio ($19), which includes 2 shrimps (peeled or unpeeled), 2 shrimp balls, and a dumpling. The bowl came out within 10 mins of ordering and was piping how. I can't rave about the broth enough because it was full of Umami flavor. You can really taste the shrimp in the broth. The ramen thin noodles I chose were cooked perfectly and was tender to the bite. The shrimp balls were delicious and was bursting with small roe in them. The dumpling was good, but lacked more filling. The shrimp was good, but they didn't peel off the entire shell like I chose so I had to peel it myself which defeats the purpose of choosing the peeled option. The service was great, food came out quick, and I was thoroughly full.
